Cumin – 1/2 cup
Coriander – 3/4 cup
Cinnamon – 3 inch piece
Mace – 2
Black cardamom – 4-5
Black pepper – 2 tbsp
Nutmeg Powder- 2
Dry red chili – 3-4
Green cardamom – 3 tsp
Fennel seeds – 2 tsp
Ginger powder – 1 tsp
Bay leaves – 4-5
Cloves – 1 tbsp
Shah jeera – 1 tsp
Star anise – 4-5

Garam Masala Recipe
First toast the coriander seeds in a pan over low heat. When the aroma of coriander begins to emerge, place it in a vessel. After that, add cumin and jeera to the pan and fry them both. Maintain a slow flame on the gas. When the cumin begins to emit an aroma, place it in a vessel. Take the black pepper and red chili and fry them until crisp, then set them aside.

Now add the nutmeg, fennel, cloves, green cardamom, and black cardamom to the pan and fry until the spices begin to smell wet. After that, place all of the spices in a container and allow them to cool. When the spices have cooled, place all of the roasted spices in a mixer jar.

After that, using the jar lid, finely grind all of the spices. Put the spice powder in a container and add the ginger powder, mixing well. Garam masala, rich in flavor and purity, is ready. It should be kept in an airtight container.
